1. Prepare the Pie Crust:
- You can use store-bought pie crusts, but making your own can be even more delicious!
- In a large mixing bowl, combine 2 1/2 cups of all-purpose flour and 1 teaspoon of salt.
- Add 1 cup (2 sticks) of cold, unsalted butter, cut into small cubes.
- Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add 6-8 tablespoons of ice-cold water, one tablespoon at a time, mixing gently until the dough comes together.
- Divide the dough into two equal portions, shape them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling:
Peel, core, and slice the apples into thin, even slices.
In a large mixing bowl, combine the sliced apples, 3/4 cup granulated sugar, 2 tablespoons flour, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon salt, and 1 tablespoon lemon juice. Mix well and set aside.
3. Assemble the Pie:
- Preheat your oven to 425°F (220°C).
- Roll out one of the chilled pie dough disks on a floured surface to fit a 9-inch pie dish. Place the rolled-out dough in the pie dish.
- Add the apple filling to the pie crust, spreading it evenly.
- Dot the top of the filling with 2 tablespoons of unsalted butter, cut into small pieces.
- Roll out the second pie dough disk and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
