- 1 pound (450 grams) of boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup of green beans, cut into small pieces
- 1 cup of corn kernels (fresh, frozen, or canned)
- 6 cups of chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish (optional)
Instructions:
