Sticky chicken fingers salad is a delicious dish that combines crispy chicken fingers with a flavorful and sticky sauce served over a bed of fresh salad greens. Here's a basic recipe to make sticky chicken fingers salad:

Ingredients:

For the Chicken Fingers:

  • 1 pound (450g) boneless, skinless chicken tenders or breasts, cut into strips
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola oil)

For the Sticky Sauce:

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon grated ginger
  • Red pepper flakes (optional, for heat)

For the Salad:

  • Mixed salad greens (e.g., lettuce, spinach, arugula)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Red onion, thinly sliced
  • Bell peppers, sliced
  • Carrots, julienned

Instructions:

Prepare the Chicken Fingers:

a. In three separate bowls, place the flour in one, beaten eggs in another, and breadcrumbs seasoned with salt and pepper in the third.

b. Dredge each chicken strip in the flour, dip into the beaten eggs, and coat with breadcrumbs. Make sure they are evenly coated.

c. Heat oil in a skillet over medium-high heat. Fry the chicken fingers until they are golden brown and cooked through, about 3-4 minutes per side. Remove them from the oil and place them on a paper towel-lined plate to remove excess oil.

Prepare the Sticky Sauce:

a. In a small saucepan, combine honey, soy sauce, ketchup, brown sugar, minced garlic, grated ginger, and red pepper flakes (if using).

b. Bring the mixture to a simmer over medium heat, stirring constantly. Let it simmer for a few minutes until it thickens and becomes sticky. Remove it from the heat.

Assemble the Salad:

a. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, bell peppers, and carrots.

Assemble the Dish:

a. Drizzle the sticky sauce over the crispy chicken fingers and toss them to coat evenly.

b. Place the dressed chicken fingers on top of the salad greens.

Serve:

a. Serve the sticky chicken fingers salad immediately, garnishing with extra sauce and your choice of salad dressing if desired.

This dish offers a delightful contrast of crispy and sticky chicken with the freshness of the salad greens and vegetables. It's a satisfying and flavorful meal that's perfect for lunch or dinner. Enjoy!
