Mutton Shami Kebab
Mutton Shami Kebab is a popular Indian and Pakistani dish made from ground mutton (goat meat) or sometimes a combination of mutton and lentils. These kebabs are known for their melt-in-the-mouth texture and rich flavors. Here's a basic recipe for making Mutton Shami Kebabs:
Ingredients:
- 500 grams of boneless mutton (goat meat)
- 1/2 cup split Bengal gram (chana dal), soaked for a few hours
- 1 onion, finely chopped
- 2-3 green chilies, chopped (adjust to your spice preference)
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt to taste
- Cooking oil for frying
Instructions:
- Drain the soaked chana dal and place it in a pressure cooker along with the mutton, chopped onions, green chilies, minced garlic, minced ginger, turmeric powder, and a little salt.
- Add enough water to cover the ingredients, close the pressure cooker lid, and cook until the mutton and dal are tender. Cooking times may vary, but it typically takes 20-25 minutes on medium heat after the pressure is reached.
- Once cooked, allow the mixture to cool completely. You can also remove any excess water if there is any.
- Transfer the cooked mutton and dal mixture to a food processor or blender. Add the cumin seeds, garam masala, and coriander powder. Blend until you have a smooth, thick paste. If it's too dry, you can add a little water to help with blending, but be cautious not to make it too wet.
- Take small portions of the mixture and shape them into flat, round patties or kebabs.
- Heat oil in a frying pan or skillet over medium heat. Once the oil is hot, carefully place the kebabs in the pan and fry them until they turn golden brown and crispy on both sides. You can deep-fry or shallow-fry them as per your preference.
- Once the kebabs are cooked, remove them from the oil and place them on a paper towel-lined plate to remove excess oil.
- Serve the Mutton Shami Kebabs hot with mint chutney, sliced onions, and lemon wedges.
Mutton Shami Kebabs are often enjoyed as appetizers, snacks, or even as a side dish with rice or flatbreads like naan or roti. They are delicious and make for a great addition to any meal or as a standalone snack.
