Mutton karahi

 


Mutton karahi, also known as mutton karahi or karahi gosht, is a popular Pakistani and North Indian dish made with tender pieces of mutton (goat meat) cooked in a wok-like pan called a "karahi" or "kadai." It's a flavorful and aromatic dish that's loved for its rich and spicy taste. Here's a basic recipe for making mutton karahi:


Ingredients:


  • 500 grams of mutton, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 3-4 green chilies, slit
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup yogurt
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • 2 tablespoons cooking oil or ghee
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions:

  • Heat oil or ghee in a large karahi or a heavy-bottomed pan.
  • Add cumin seeds and let them splutter.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
  • Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
  • Add the mutton pieces and cook on high heat until they turn brown on all sides.
  • Reduce the heat to medium and add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
  • Add yogurt and mix it with the spices and mutton. Cook until the yogurt is well incorporated and the oil starts to separate.
  • Add slit green chilies and garam masala. Stir well.
  • Cover the karahi with a lid and let the mutton cook on low heat until it becomes tender. This can take anywhere from 45 minutes to 1.5 hours, depending on the quality of the meat. You may need to add a little water during cooking to prevent it from sticking to the bottom of the pan.
  • Once the mutton is tender and the oil has separated, garnish with fresh coriander leaves.
  • Serve hot with naan, roti, or steamed rice.
