Mutton ghee roast


 Mutton ghee roast is a delicious and flavorful South Indian dish that is known for its spicy and aromatic taste. It is typically made with tender pieces of mutton (goat meat) that are marinated in a blend of spices and roasted in ghee (clarified butter) until they are cooked to perfection. Here's a basic recipe for making mutton ghee roast:


Ingredients:


For the Marination:


  • 500 grams of boneless mutton pieces
  • 2 tablespoons red chili powder (adjust to your spice preference)
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • 2 tablespoons yogurt

For the Roast:


  • 4 tablespoons ghee (clarified butter)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 sprig of curry leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 1/2 teaspoon asafoetida (hing)
  • 2-3 dried red chilies
  • 1 teaspoon fennel seeds
  • 2 tablespoons tamarind paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:


Marinate the Mutton:


In a mixing bowl, combine the mutton pieces with all the marination ingredients. Mix well to ensure that the mutton is coated evenly with the spices. Allow it to marinate for at least 30 minutes or longer in the refrigerator.

Heat Ghee:


In a heavy-bottomed pan or a kadai, heat the ghee over medium heat.

Temper the Spices:


Add mustard seeds, fenugreek seeds, asafoetida, dried red chilies, and fennel seeds to the hot ghee. Sauté until the mustard seeds start to splutter.

Add Onions and Curry Leaves:


Add the finely chopped onions and curry leaves to the pan. Sauté until the onions become translucent and start to turn golden brown.

Add Tomatoes:


Add the finely chopped tomatoes and cook until they become soft and mushy.

Roast the Marinated Mutton:


Now, add the marinated mutton to the pan and mix well with the onion and tomato mixture.

Cook the Mutton:


Cook the mutton on medium heat until it starts to release its juices and the ghee begins to separate. Stir occasionally to prevent sticking to the bottom of the pan.

Add Tamarind Paste:


Add the tamarind paste and continue to cook until the mutton is tender and cooked through. This may take around 20-30 minutes, depending on the meat's tenderness.

Adjust Seasoning:


Taste the mutton ghee roast and adjust the salt and spice levels according to your preference.

Garnish and Serve:


Garnish the dish with fresh coriander leaves. Remove from heat and serve hot with steamed rice or Indian bread like naan or roti.
