  • 1/2 cup plain yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Chopped fresh herbs (optional, for garnish)

Instructions:


Prepare the Vegetables:


Wash and peel (if necessary) the vegetables you plan to use. Grate them using a box grater or a food processor. If using zucchini, squeeze out excess moisture by placing it in a clean kitchen towel and wringing it.

Combine Ingredients:


In a large mixing bowl, combine the grated vegetables, minced garlic, chopped fresh herbs, Parmesan cheese (if using), salt, pepper, and paprika/cayenne pepper (if using). Mix well.

Add Eggs and Flour:


Crack the eggs into the vegetable mixture and stir until everything is well combined. Gradually add the all-purpose flour and continue to mix until the mixture becomes thick enough to hold together.

Heat Oil:


In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it's hot but not smoking.
