Ingredients:

  • 8 ounces of your choice of pasta (such as spaghetti or linguine)

  • 1/2 cup thinly sliced cucumber
  • 1/2 cup chopped scallions (green onions)

  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts or cashews (for garnish)

For the dressing:


  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or maple syrup (for sweetness)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste for spiciness)
  • Salt and pepper to taste

Instructions:


  1. Cook the pasta according to the package instructions until it's al dente. Drain and rinse it under cold water to stop the cooking process. Allow it to cool completely.
  2. In a large bowl, combine the shredded Napa cabbage, carrots, bell peppers, cucumber, scallions, cilantro, and mint. Toss everything together to mix well.
  3. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, red pepper flakes, salt, and pepper. Taste the dressing and adjust the seasonings as needed.
  4. Pour the dressing over the salad ingredients and toss until everything is evenly coated with the dressing.
  5. Add the cooked and cooled pasta to the salad mixture. Toss everything together gently to combine.
