Fried Chicken

Ingredients:

For the chicken:

  • 3-4 pounds chicken pieces (such as drumsticks, thighs, wings, or breasts)
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the coating:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Oil for frying (such as vegetable, canola, or peanut oil)

Instructions:

Prep the Chicken:

Rinse the chicken pieces and pat them dry with paper towels.

Season the chicken with salt, pepper, paprika, garlic powder, and onion powder. Rub the seasoning evenly over the chicken pieces. Let them sit for about 15-20 minutes to allow the flavors to penetrate.

Prepare the Coating:

In a shallow dish, combine the flour, salt, pepper, paprika, garlic powder, and onion powder.

Dredge each seasoned chicken piece in the flour mixture, pressing the coating onto the chicken to adhere. Shake off any excess flour.

Heat the Oil:

In a large, deep skillet or pot, pour enough oil to have a depth of about 1-2 inches. Heat the oil over medium-high heat until it reaches around 350-375°F (175-190°C). A cooking thermometer is helpful for accuracy.

Fry the Chicken:

Carefully place the coated chicken pieces into the hot oil, a few at a time, without overcrowding the pan. This ensures even cooking and crispiness.

Fry the chicken for about 8-12 minutes per side, depending on the size of the pieces. The internal temperature of the thickest part of the chicken should reach 165°F (75°C), and the coating should be golden brown and crispy.

Use tongs to turn the chicken occasionally to ensure even browning. Adjust the heat if needed to maintain a consistent frying temperature.

Drain and Serve:

Once the chicken is cooked through and golden brown, carefully remove it from the oil and place it on a wire rack or a plate lined with paper towels to drain excess oil.

Serve:

Serve the fried chicken hot, either immediately or after a few minutes of resting. It's delicious on its own or with your favorite dipping sauces, coleslaw, mashed potatoes, or biscuits.

Remember that working with hot oil can be dangerous, so exercise caution and follow proper safety practices when frying. Enjoy your homemade fried chicken!
