French Fries
Ingredients:
- Potatoes (Russet or Idaho potatoes are commonly used)
- Vegetable oil (such as canola or sunflower oil)
- Salt, to taste
Instructions:
Prep the Potatoes:
Start by peeling the potatoes if desired. You can also leave the skins on for a more rustic texture.
Cut the potatoes into uniform sticks or wedges. A thickness of around 1/4 to 1/2 inch (0.6 to 1.3 cm) works well.
Soak the Potatoes:
Place the cut potatoes in a large bowl of cold water and let them soak for about 30 minutes. This helps remove excess starch from the potatoes, resulting in crispier fries.
Dry the Potatoes:
After soaking, drain the potatoes and pat them dry with paper towels or a clean kitchen towel.
Preheat the Oil:
Pour enough vegetable oil into a deep fryer or a large heavy-bottomed pot to submerge the potatoes. Heat the oil to around 350°F (175°C).
Fry the Potatoes:
Carefully add a batch of dried potatoes to the hot oil using a slotted spoon or a frying basket. Make sure not to overcrowd the pot, as this can lower the oil temperature and result in soggy fries.
Fry the potatoes for about 4 to 5 minutes, or until they are pale golden and slightly soft. They shouldn't be fully cooked at this stage.
Drain and Cool:
Remove the partially fried potatoes from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool for a few minutes.
Final Fry:
Increase the oil temperature to around 375°F (190°C).
Return the partially fried potatoes to the hot oil in batches and fry for an additional 3 to 4 minutes, or until they are golden brown and crispy.
Season and Serve:
Once the fries are done, use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate.
Immediately season with salt while the fries are still hot.
Enjoy:
Serve the French fries hot and crispy as a delicious snack or side dish. You can also serve them with ketchup, mayonnaise, or your favorite dipping sauce.
