Fajita Pizza







 Ingredients:


For the Pizza Dough:


1 pound (about 450g) pizza dough (store-bought or homemade)

Flour for dusting

For the Fajita Toppings:


  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • For the Sauce and Cheese:

  • 1/2 cup tomato sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro (coriander) for garnish

Instructions:


Preheat the oven: Preheat your oven to the temperature recommended on your pizza dough package or at around 450°F (230°C).


Prepare the toppings: In a skillet, heat the olive oil over medium-high heat. Add the sliced onions and bell peppers. Sauté until they start to soften, about 3-4 minutes. Push the vegetables to the side of the skillet and add the sliced chicken. Cook until the chicken is no longer pink and cooked through, about 4-5 minutes. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, and pepper. Cook for an additional 1-2 minutes until the spices are fragrant. Remove from heat and set aside.


Roll out the dough: On a floured surface, roll out the pizza dough to your desired thickness. Transfer the rolled-out dough to a pizza pan or baking sheet.


Assemble the pizza: Spread the tomato sauce or pizza sauce evenly over the pizza dough, leaving a border around the edges for the crust. Sprinkle half of the shredded mozzarella and cheddar cheeses over the sauce. Evenly distribute the cooked fajita toppings over the cheese. Top with the remaining shredded cheese.


Bake the pizza: Place the pizza in the preheated oven and bake according to the dough package instructions or until the crust is golden and the cheese is melted and bubbly, about 12-15 minutes.


Garnish and serve: Once the pizza is done baking, remove it from the oven and let it cool slightly. Sprinkle chopped fresh cilantro (coriander) over the top for a burst of fresh flavor. Slice the pizza and serve hot.
