Doner Kebab recipe
Ingredients:
For the meat:
- 2 pounds (approx. 1 kg) boneless lamb or chicken, thinly sliced
- 1 large onion, grated
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons olive oil
For serving:
- Pita bread or flatbread
- Sliced tomatoes
- Sliced onions
- Shredded lettuce
- Tzatziki sauce or yogurt-based sauce
Instructions:
- In a bowl, combine the grated onion, minced garlic, ground cumin, paprika, coriander, turmeric, cinnamon, cayenne pepper, salt, pepper, and olive oil to create the marinade.
- Add the thinly sliced meat to the marinade, making sure each slice is well coated. Cover the bowl and let the meat marinate in the fridge for at least 2-4 hours, or preferably overnight.
- If you have a vertical rotisserie, you can skewer the marinated meat slices onto the rotisserie rod, layering them tightly to form a cone shape. If you don't have a rotisserie, you can use a baking dish. Preheat your oven to 350°F (175°C).
- For the rotisserie: Cook the meat on the rotisserie, basting occasionally with any remaining marinade, until the meat is fully cooked and nicely browned on the outside. This should take about 1-2 hours, depending on your rotisserie and the thickness of the meat slices.
- For the oven: If using a baking dish, layer the marinated meat slices tightly in the dish. Cover with aluminum foil and bake for about 45 minutes to an hour. Then, remove the foil and broil for a few minutes to get a nice browning on the top.
- Once the meat is cooked, remove it from the rotisserie or oven and let it rest for a few minutes. Then, using a sharp knife, thinly slice the meat off the cone or out of the baking dish.
- To serve, warm the pita bread or flatbread. Place a generous portion of sliced meat on the bread, and top with sliced tomatoes, onions, shredded lettuce, and your choice of sauce, such as tzatziki.
- Roll up the bread to enclose the filling and enjoy your homemade Doner Kebab!
