Creamy Seafood Salad Sandwich
Ingredients:
For the seafood salad:
- 1/2 pound cooked shrimp, peeled and deveined, chopped
- 1/2 pound cooked crab meat, flaked
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper (any color)
- 1/4 cup mayonnaise
- 2 tablespoons Greek yogurt (or more mayonnaise)
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- 1 teaspoon lemon juice
- Salt and pepper to taste
For assembling:
- 4 to 6 slices of your favorite bread (whole wheat, ciabatta, etc.)
- Lettuce leaves
- Sliced tomatoes
- Additional dill and parsley for garnish (optional)
Instructions:
- In a large bowl, combine the chopped shrimp, flaked crab meat, diced celery, diced red onion, and diced bell pepper.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, chopped dill, chopped parsley, lemon juice, salt, and pepper. Adjust the amounts of yogurt and mayonnaise based on your desired creaminess.
- Pour the dressing over the seafood mixture and gently toss everything until well combined. Adjust salt and pepper to taste.
- Cover the seafood salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- To assemble the sandwiches, toast the slices of bread if desired. Place lettuce leaves on one slice of bread, followed by a generous scoop of the seafood salad.
- Top the seafood salad with sliced tomatoes and additional dill and parsley for garnish, if desired.
- Place another slice of bread on top to complete the sandwich.
- Repeat the process for the remaining sandwiches.
- Serve the creamy seafood salad sandwiches immediately, and enjoy!
