 Chicken Piccata



Ingredients:


  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • All-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup brined capers, rinsed
  • 1/4 cup fresh parsley, chopped

Instructions:


Prepare the Chicken:


Start by pounding the chicken breasts to an even thickness, about 1/2 inch, between two sheets of plastic wrap or parchment paper.

Season the chicken breasts with salt and pepper on both sides.

Dredge the chicken in flour, shaking off any excess.

Sear the Chicken:


In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.

Once the butter is melted and the oil is hot, add the chicken breasts. Cook for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

Prepare the Sauce:


In the same skillet, add the lemon juice, chicken broth, and capers. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet.

Let the mixture simmer for about 2 minutes to reduce slightly.

Finish the Dish:


Reduce the heat to low and add the remaining 2 tablespoons of butter to the skillet. Swirl the butter in the sauce until it's fully melted and incorporated.

Return the chicken to the skillet and spoon the sauce over the top. Let the chicken warm up in the sauce for a minute or so.

Serve:


Transfer the chicken to serving plates.

Garnish with chopped parsley.

Serve the Chicken Piccata with the sauce drizzled over the top.

Optional:


Chicken Piccata is often served with a side of pasta or steamed vegetables. You can also serve it with a light salad for a balanced meal.
