Chicken Kebabs with Tzatziki Sauce
Ingredients:
For the Chicken Kebabs:
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Cherry tomatoes
- Wooden skewers, soaked in water for 30 minutes
For the Marinade:
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric (optional)
- Salt and pepper to taste
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions:
In a bowl, mix together all the marinade ingredients: olive oil, minced garlic, paprika, cumin, coriander, turmeric, salt, and pepper.
Add the chicken cubes to the marinade and toss to coat. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
While the chicken is marinating, prepare the tzatziki sauce. In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix well and refrigerate until ready to serve.
Preheat the grill to medium-high heat.
Thread the marinated chicken cubes, bell peppers, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating between the ingredients.
Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Once the chicken kebabs are cooked, remove them from the grill and let them rest for a few minutes.
Serve the chicken kebabs with warm pita bread, a side of tzatziki sauce, and your favorite side dishes.
