Certainly! Here's a basic recipe for making chicken curry. Keep in mind that there are many variations of chicken curry from different cuisines, so you can adjust the ingredients and spices based on your preferences.


Ingredients:


  • 1 kg (2.2 lbs) chicken pieces, bone-in and skin-on, cut into serving sizes
  • 2 medium onions, finely chopped
  • 3-4 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2 medium tomatoes, chopped
  • 2-3 green chilies, slit (adjust according to spice preference)
  • 1/2 cup plain yogurt
  • 2 tablespoons cooking oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder (adjust according to spice preference)
  • 1 teaspoon garam masala
  • Salt, to taste
  • Fresh cilantro leaves, chopped (for garnish)
  • Water, as needed

Instructions:


  • Heat oil or ghee in a large pot or pan over medium heat. Add cumin seeds and let them splutter.


  • Add chopped onions and sauté until they turn golden brown.


  • Add minced garlic and ginger. Sauté for another 1-2 minutes until the raw smell disappears.


  • Add chopped tomatoes and green chilies. Cook until the tomatoes turn soft and oil starts to separate from the mixture.


  • Add ground turmeric, ground coriander, cumin powder, and chili powder. Mix well and cook for a couple of minutes to allow the spices to cook.


  • Add the chicken pieces to the pot. Mix them with the spice mixture and cook until the chicken changes color and gets seared on all sides.


  • Beat the plain yogurt to make it smooth. Reduce the heat to low and add the yogurt to the pot. Stir well to coat the chicken with yogurt and spices. Cook for a few minutes, stirring occasionally.


  • Add enough water to cover the chicken. Bring the mixture to a simmer, then cover the pot and let it cook on low heat until the chicken is tender and cooked through. This might take around 20-30 minutes, depending on the size of the chicken pieces.


  • Once the chicken is cooked, add garam masala and salt to taste. Adjust the seasoning according to your preference.


  • Garnish the curry with chopped cilantro leaves.


  • Serve the chicken curry with steamed rice, naan, or roti.
