Cashew Chicken
Ingredients:
For the Chicken Marinade:
- 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
For the Stir-fry:
- 2 tablespoons vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1/2 cup roasted cashews
- 3 green onions, chopped (for garnish)
For the Sauce:
- 1/4 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon cornstarch
Instructions:
- In a bowl, combine the soy sauce, oyster sauce, cornstarch, sesame oil, and black pepper for the chicken marinade. Add the chicken pieces and toss to coat. Let it marinate for about 15-20 minutes.
- In a separate bowl, whisk together the chicken broth, soy sauce, oyster sauce, hoisin sauce, and cornstarch to make the sauce. Set aside.
- Heat one tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated chicken and cook until it's no longer pink and has a nice sear. Remove the chicken from the wok and set aside.
- In the same wok, add another tablespoon of vegetable oil. Add the sliced onion and cook until it becomes translucent.
- Add the minced garlic and sliced bell peppers to the wok. Stir-fry for a few minutes until the peppers are slightly tender but still crisp.
- Return the cooked chicken to the wok and mix with the vegetables.
- Give the sauce a quick stir and then pour it into the wok over the chicken and vegetables. Stir everything together and let the sauce thicken.
- Add the roasted cashews to the wok and give it a final toss to combine everything.
- Once the cashews are heated through, remove the wok from the heat.
- Serve the Cashew Chicken over steamed rice, and garnish with chopped green onions.
